Type: Extract

Fermentables:
Grains:
(250g) Chocolate malt
Extract:
1.8kg Muntons Dark Liquid Extract
750g Light Dry Extract

Hops
15g Sticklebract 12.2%AAU (60min)
15g NZ Hallertau 7.2%AAU (30min)
15g NZ Hallertau 7.2%AAU (5min)

Yeast:
SafLager S-23 Dry Yeast

Procedure:
  • Steep Chocolate malt in hot water (68C) for 30mins
  • Bring to boil, add extract and hops at intervals described above
  • Cool in water bath
  • Add to fermenter and top up with water
  • Ferment at 14C for 14-21 days
  • Transfer to secondary and lager in fridge for 3-4 weeks at 3-4C
  • Bottle condition for minimum 3 weeks

  1. Very happy with this as a first attempt at a lager.
    FG wasn't as low as planned. Possibly due to not enough yeast being pitched.
    Fermenting in a water bath managed to just keep it under 15C. Only really viable during the winter here.
    Lagered well in the bar fridge for 4 weeks.
    Tastes very nice. Possibly a bit low on the carbonation. Slight hint of liquorice and nice hop/malt balance.

  2. This beer is continuing to go down well. I can't wait to get my temperature controller wired up and hooked into my fridge so I can give this another go under more controlled conditions.
    I'll also adjust the recipe to include a grain bill more true to the style now that I'm doing partial mashes.
