Holiday Spiced Porter

I've been keen to try a spiced beer for a while. Planning for it to be ready for a mid-winter Christmas.

Note, this is a 10 litre all grain batch which I'll be able to do with my 12 litre brew pot.
The process will be the same as for my partial mashes, except that there's no need to add extract to the boil, and there's no need to top up the fermenter with boiled/cooled water.

  1. I'll be brewing this some time this week.

I've had a change of plan somewhat. I'm going to ferment it as a standard Porter (sans spices), then make a spice tea on bottling day by boiling the spices in a small amount of water and letting it cool. I'll then add the spice tea to the bottling bucket.

This approach has also led me to change the recipe to a 19L batch (partial mash adding 1.25kg DME and adjusting the grain bill and hop additions). I can then bottle half of it as un-spiced Porter, then add the spice tea, and bottle the rest as my spiced Porter.

So, I'll then be able to compare the two beers :)
